Northumbria Rice Cake

The Northumbria Rice Cake is traditionally served during the festive season, this light-as-a-feather sponge cake is a local delicacy in the North Country. The use of ground rice in this local, Northumbrian recipe gives this simple, sweet, buttery cake a slightly chewy, ‘al dente’ texture. Serve as a light alternative alongside a rich fruited Christmas cake, have a slice to accompany a cup of tea at any time, or serve warmed through with cream or ice cream.
